My Favorite Dutch Babies

This recipe will knock your socks off! If I let my kids decide on a breakfast, this is what they choose every time.

Ingredients

  • 2 cups milk

  • 5 eggs

  • 1 tsp vanilla

  • 1 1/2 cup flour

  • 1/4 cup sugar

  • Pinch of salt

  • 1/2 cup salted butter See instructions; do not blend with other ingredients

  • 1 lemon ;

  • powdered sugar for garnish

Instructions

  • Preheat oven to 400 degrees. Place 1/2 c butter in 9×13 inch glass baking dish (or 9-10 inch cast iron skillet) Place baking dish with butter in oven for about 5 minutes or until butter is melted and bubbly. In a bowl combine eggs, flour, sugar and salt. Mix into thick paste. Add milk and whisk until smooth. Add Vanilla. When the butter is completely melted pour batter into dish. Cook 20-30 minutes or until pancake is set in the middle and the edges are very puffy and golden brown. Remove from oven. Serve with a squeeze of lemon juice and powdered sugar or your favorite syrup. Note: I like to double the recipe, and put it into my 15 inch round cast iron.
